Special thanks to Tina P for telling me about this place! This is a Fresh Mex restaurant with a couple of locations on the Westside. Their menu, which can be found on their website, specifically indicates "Veggie Plates":

• FRESH VEGGIE PLATE fresh garden vegetables served with herb rice, black beans and corn or flour tortillas
• BLACK BEAN TACOS 2 crispy tacos filled with black beans, pico de gallo and guacamole, served with herb rice and salad
  
• VEGGIELADAS filled with spinach, mushrooms, tomatoes & onions in tomatillo sauce served with herb rice and black beans
• GREENHOUSE TAMALES a veggie tamale, two spinach/chili/cheese tamales, and served with herb rice and black beans
• GARDEN BURRITO with spinach, mushrooms, onions, tomatoes, rice & beans in a tomatillo sauce, plus guac and sour cream
• TROPICAL ENCHILADAS 2 enchiladas spinach, mushrooms, onions and herb rice in tomato jalapeno sauce
  
• VEGGIE BURRITO with fresh veggies, rice & beans, topped with ranchero sauce, served with guac & sour cream

I spoke with one of their managers who said they only use canola oil and that their rice, bean, and sauces have a vegetarian base.
