3/29/09 update: Buca still has the eggless wheat penne pasta that you can use as a substitute for any pasta dish.

I went to Buca the other day and I found that the Penne Campofiore was no longer on the list. In my previous post it had been mentioned as a dish that was vegetarian and without eggs. The waitress informed me that it was no longer available and that all pastas were now with a chicken-broth base. I emailed Buca to get the full story. It turns out the waitress was incorrect.
"Although our Alfredo sauce now has a chicken base, our other pasta sauces do not. Also, we serve egg fettuccine but the other pastas do not have egg. Here is an updated list of vegetarian items without eggs:
- Bruschetta
- Fried Mozzarella
- Garlic Bread
- Garlic Bread with Mozzarella
- Mozzarella Caprese
- Warm Tomato Spinach Salad
- Pizza con Formaggio
- Margherita Pizza
- Gnocchi al Telefono
- Spaghetti Marinara
- Italian Broccoli Romano
- Garlic Mashed Potatoes
- Green Beans"

Wow - thanks for the info! I HATE when staff has no idea what's in the food - or worse, thinks they do, but are wrong. If I ran a restaurant, I'd make sure everyone there knew every allergen and every animal product in every dish.
