An Alternative to Tofurky

I hope this reaches those of you who are interested in time. Instead of buying Tofurky, made by Turtle Island Foods, you can make your own. The following is recipe from Chef Jason Wyrick:

Tofu Mix:

  • 5 lbs. of firm tofu
  • 1 tsp. of turmeric
  • ½ tsp. of salt
  • 2 tbsp. of carrot juice
  • 1 clove of garlic
  • 2 tsp. of onion powder
  • 2 green onions
Basting Sauce:
  • ½ cup of toasted sesame oil
  • ¼ cup of tamari
  • 2 tsp. of paprika
  • 1 tsp. of turmeric
  • ½ tsp. of salt
  • 1 tsp. of black pepper
  • 1 tbsp. of fresh rosemary
  • ¼ cup of orange juice
  • 1 tbsp. of prepared brown mustard
Directions:
  1. Blend together the turmeric, salt, carrot juice, garlic, onion powder, and green onions in a small blender.
  2. Mash this into the tofu by hand until it is thoroughly combined.
  3. Wrap the tofu mix in cheesecloth.
  4. Set this in your refrigerator with a weight on top and let it sit for three hours.
  5. Preheat the oven to 400 degrees.
  6. Combine the toasted sesame oil, tamari, paprika, turmeric, salt, pepper, rosemary, orange juice, and mustard together.
  7. Lightly oil a loaf pan.
  8. Add about ¼ of the sauce to the bottom of the pan and press the tofu into the pan.
  9. Pour another ¼ of the sauce over the tofu.
  10. Cover it with foil.
  11. Bake this for one hour and thirty minutes, basting it every fifteen minutes.

Thanks for this. I am allergic to wheat so Tofurky and all the products like it are off the shopping list.
